Burtons Grill and Bar is a godsend. I’ve gotten sick so many times at restaurants, I rarely eat out anymore unless the entire restaurant is gluten free. It’s not worth the hassle and the risk to my health.
If I do try to eat out, I usually spend a ton of time interrogating the staff until they’re thoroughly annoyed with me, and until I’m pretty confident they have no idea how to prepare a celiac-safe meal.
Whether you’ve been diagnosed with celiac disease, have a severe gluten allergy or have a family member who has, the changeover can be daunting. Where do you start when going gluten free?
1. MAKE PEACE WITH GOING GLUTEN FREE
It sounds a little cheesy, but it’s important. I fought against my situation for quite a while before I accepted that my lifestyle was going to change drastically forever. Transition time is needed for all of us. I had breakdowns and temper tantrums on and off for about six months.
WHAT IS CANDIDA?
Candida is a genus of fungi that includes over 20 species of yeasts. It performs important functions such as recognizing and destroying harmful bacteria, aiding in nutrient absorption and digestion, and decomposing the body when it’s dead. Ideally it lives in harmony with a variety of other microorganisms in your body.
However, when not kept in balance, many species can cause infection, with Candida albicans being the most prevalent. Candida albicans is very opportunistic, meaning it will multiply and take over if given the chance, converting from its single cell yeast form to its fungal form. This is called candida overgrowth or candidiasis.
We all know sugar, dairy, and grains are rough on a celiac’s system, even when they’re gluten free. However, I have to indulge once in a while so I can feel human, and that indulgence includes cookies! If you’re stronger than I am, and can adhere to a clean diet all the time, my hat goes off to you.
